We stopped by a seafood market today and picked up a nice filet of fresh Atlantic salmon. We also got 3 pounds
of extra-large shrimp for another meal. The salmon was marinated for about 45 minutes with some lemon juice,
Mr. Yoshida’s, garlic pepper and pickled jalapeno slices. This was per my wife’s request. We both really like the
flavor that the jalapenos add to the salmon.
I am using the small vortex, large side up, with a small Weber chimney of Kingsford blue. I soaked a cedar plank
for about 4 hours. Getting it heated up on both sides.
Once the plank was ready I sprayed it with some canola oil and put the filet on to cook. Looks like I needed to cut
the filet in half.
Salmon is done!
Plated with some boxed cheesy broccoli rice and fresh green beans cooked in the pressure cooker with bacon,
garlic and ham bouillon.
This was definitely a tasty and filling dinner.
