I have a vortex as you know. Why did you go wide side up? I might be doing it wrong. I'm still working out the kinks

Pappy, I just started using it wide side up especially with my grill grates (more even heat) and now the plank. Most of the time like for chicken it is small side up.

I have been eyeballing the slo n sear for my Weber but his vortex looks sweet and so does the Fire Butler......what to do....what to do.....

your salmon looks perfect, I bet it was really good  :)

Have not jumped on the FireButler (yet) but regularly use the other two.  In fact, did two chuckies yesterday with the SnS.  Came out great.
