It’s just after midnight here so the holiday is over. People in our neighborhood that were doing fireworks either ran out or tired out; pretty quiet now. The weather was good for the weekend the rain they were forecasting stayed mostly south of us. We had a light shower Sunday morning and this morning.
We had our meal Sunday; goat meat gyros that turned out well! I had 1 ½ lbs. of ground chuck to use or freeze so this afternoon I threw together a meatloaf and did on the Traeger. I had two Tennessee tomatoes and a half of English cucumber so I made them up with Vidalia onions, vinegar, water, olive oil, garlic, dill weed, salt and pepper for a good salad.
The wife and kids all went to the St. Joseph 4th of July picnic to eat some fair fries and have whole hog sausage sandwiches and to play some bingo. Me and the dog stayed home. Since the meatloaf was out cooling I browned a slice some in a skillet and melted some Vermont white cheddar over it. I had it on a toasted bun with mustard and some of the tomato cucumber salad for my supper. Tasted good!
I think it was about 7:30 when the wife and kids came home, they didn’t last long. They brought me some kettle corn so that was my dessert. Hope everyone had a great 4th weekend!
