And - that "Sous Vide" thing...it's French for "under vacuum". I am sure we will figure out a way to "Muricanize" it... ;) ;D Whatever we call it - it is incredible for what it does for a lot of foods.

How 'bout the "Zip & Dip" method?

Works fine for me. The air displaces as you drop it in. Just leave it fully open. I have been using double zipper heavy duty freezer bags with my Anova with zero issues.
