Wendy found two cowboy steaks in the chest freezer saturday night. So we had em last night.

2.5 lbs each. These were monsters. Gave em SPG  (salt,pepper,garlic)

Set the PK up for indirect cooking. Used Cowboy Charcoal Southern Blend (very nice lump)



Look how thick these monsters are


cooked em indirectly until 105 internal and seared em to 130 internal


has a smoke ring with just a hint of pink in the center (in my younger days it would have been rare, can't digest it like I used to)


Now for the meat coma. I barely killed mine but Wendy could only eat about 1/4 of hers. She made a small salad which I completely ignored while I chucked hers down.

I could barely make it up the stairs to go to bed.......The Smoke was feeling quite full..........
