Look at my butt

Here are two butts I picked up from two different stores. I'm making kielbasa today(that'll be another thread), but notice the one on the right. It's a little darker than the one on the left. That's because it was spoiling. Even though the exp date said 11/17/12. I'm too busy looking at price and never concerned myself with color. I will now. I hope some of you all will find this helpful and save a little aggravation.

How does it smell? If it smell o.k. - there may be other reasons for the darker color. Differences in the amount and type of light it has been exposed to, any ingredients in the wash used on the meat prior ro packaging, etc. You might want to let your nose be the best judge of whether or not to use it. And - if you are concerned about your " olfactory acumen" - have someone in your household, or neighbor etc - that you think has the most sensitive nose give it the sniff test.


FWIW - I will always look for marked down meats that are going out of date. After all - we age meats to improve them...right? ;D

It smelt real funky T. Mind you, we had a lot of power outages up here since Sandy blew through town. Many stores lost power and were on generator power. Some lost power completely. I'm thinking maybe this butt thawed or got warm prior to the display case. Anywho, it's not in today's kielbasa. :)

Yeah the smell is a great indicator! Also if the package is expanded that is a sign although with a cryovac pack you won't see that.

They do inject carbon monoxide into meat packages to keep it looking red. That is why if you open a package and turn the meat over it will be grey on the bottom.

When in doubt throw it out!

I am just getting over the stomach flu and all I can say is...if you have any doubts, throw it out!!! I have opened up pork packs before and got hit with that sulfur smell.....out it went....gotta start saving market receipts!!

Happened to me with some ribs that I purchased. The cryo vac looked like it was inflated. That was after only one day in the fridge :o.
