First Cook On Hasty Bake

Decided to smoke a 5-6 lb butt for first cook.
Coated with mustard & a heavy dose of Pork Barrel BBQ rub
Filled pan 2/3 full with charcoal briquettes with 3-4 wood chunks buried.
Used deflector ( which by the way had never been used )
When butt had been on 3 hours the hood thermometer read 275 F but the butt looked like cooking rapidly!
Got my igrill & probed the meat & put the grate probe on .
GRATE TEMP WAS 360F !
Closed vents almost completely but took a long time to come down.
Foil panned the butt with a little beer ( it was handy) at 165F
Finished on the grill. Turned out OK a little dry.
Few things I learned.
Don't trust the hood thermometer!
Might have used too much charcoal? Got too hot & cooked the butt to 190-195 F without adding any fuel.
This is a big cooker, my butt looks tiny on the grate, with an extender ( I ordered) you can cook for a crowd.
The grease drain rod works, my homemade grease pan overflowed!
Although not made from extremely thick materials the design is such that no lit charcoal & no ashes do not come in contact with the main grill only with the replaceable ash pan , charcoal pan & grate.
Parts available & almost reasonable!
Ordered drip pans & an extension rack.
Although first cook wasn't perfect..... Who wants a cooker that doesn't require a little skill & a learning curve!

That is a big grill. Can you start with less lit charcoals next time to get a lower cooking temp? These grills have been around forever...anyone at Hasty Bake to talk to for a tip or trick??  Then again, part of the fun is mastering it yourself  :)

There is a corporate Hasty Bake owners forum but like many of those not very active.
I'd planned on a sitting on the deck, drinking adult beverages & monitoring the cook but temperature has been running 10-15 F above normal & it was 94-95 in the shade.
There were some college football games I wanted to see.
I fell asleep  ???
Those are just excuses.... My EGO got the best of me  :(

You will have that pit mastered in no time  :thumbup:

I botched a tri-tip yesterday. Tried a different seasoning/cooking combination and it was terrible.........sometimes ya just cant win...........

Do try lighting less coals. Hasty Bake has a owners group on Facebook which is where all the action is. A lot of forums have gone fairly quite with Facebook now in the mix. This is one of the few still active. We have our second Hasty Bake went from a Legacy to a Gourmet. After you learn the grill it will become a favorite.

I guess I know now that my mind is planted firmly in the gutter. I read that as "Dang that butt looks tiny on that girl" LOL!!!!!
A revolving door of cookers and smokers. Some are keepers, some are here today, gone tomorrow!
