Philly cheesesteak fajitas

Since a longer time I wanted to try Philly Cheesesteak Sandwiches. But the sandwich was substituted by tortillas.

Before cooking the Phillys I prepared a starter: spinach salad with Panko-crusted goatcheese medaillons.



Here we go with the cheesesauce - I didn't have something like cheesewhiz, so I created a homemade sauce of milk, Swiss and Dutch cheese, some spices and soda. Then I seared onions and mushrooms in a cast iron skillet.







Then I seared sliced ribeye on the grill and blended the met with the onions and shroom in the skillet.







The tortillas were heated and covered with iceberg lettuce, the meat-onion-mushroom-mix. Then the cheesesauce was spread over that all and the fajitas were plated.

That is a fantastic cook!!  Your Philly Cheesesteak idea has moved up the to-do list.  Tee and I each bought six dozen freshly made tortillas on our hunting trip.  I have five dozen in the freezer.  These tortillas are different than the typical store-bought ones.  They are thicker than most tortillas and have a really good flavor to them.  They would be perfect for some Philly Cheesesteak tortillas.
