Thursday we went to the butcher shop to get scrapple. While Margo is looking around, I am watching the butcher cutting up some flat iron. He gave me a little education and a steak to go!
We marinated it and then cooked it as normal. Some people on the internet said that it would be tough if cooked to well done. I pulled Margo's just a bit early and she was very happy. (The dog did not get a piece!) Mine was tender as well and had a good flavor.
