Flank Steak Quartet

Flank Steak Quartet

Four flank steaks, each with a different rub, all reverse seared.

Rubs - Head country
the renouned Mr Brown
John Henry Raspberry chipolte
Dove Chocolate discoveries sweet and spicy cocoa rub

All rubbed up and ready to go

Cocoa and Raspberry chipolte

Mr. Brown and Head country

on the MAK 2 star with BD Oak.

I ran them on SMOKE for about an hour, then moved them to the warming area.

Set to HIGH and install grill gates.

Done - IT is ~125-130F

Plated

Looks wonderful, Randy.  How were the four flavor profiles?  Are they all keepers, or did one really stand out?  The Dove Chocolate one sounds interesting.

They were all keepers.

The sweet and spicy cocoa I had not used on a steak before. It is very interesting, not "chocolatey" at all. There is salt, some heat. Very hard to describe the flavor, but it is good.

Head country I've done before, and knew what to expect.

The Renouned Mr brown I've used on butts, but not on a steak.

The John Henry Raspberry chipotle is a "house favorite" here.
