Duck Fat Fries

Let’s cut some fries. Quarter inch cut.



Soak for an hour changing water 3 times till clear.



Let’s fry. Need some fat



Fry twice. Fat to 325 fry for 4 minutes, drain. Fat to 375 fry till golden brown. A little kosher salt. Let’s eat these bad boys.



Best French fries I have ever eaten in my life!

We have a restaurant here that does the fries in duck fat “Hopjacks” and you are correct, they are outstanding. They also have a wall full of different beers. Come to think of it, it’s been awhile since we made happy hour.
Love to cook and eat
