Pellet grilled center cut pork chops

Two center cut pork chops seasoned with Soileau's before being frozen...

Onto the Memphis...

Flipped after 4 minutes...

Pulled them at 140F IT...

All plated...

Inside shot...

Close ups of the focaccia bread and mashed potatoes...

Thanks for looking ;)

What a perfect plate. Bet they were great.

Any reason for the freezing?

They were a few months old. I buy the large center cut loins when they are on sale and then cut them into thick chops. I season them before vac sealing & freezing. I seem to get real good flavor that way and it makes things easy. Just thaw them out and they are ready to grill ;)

Love it!!  Looks great.  I will have to try pre-seasoning when I get ready to vacuum seal some bulk-buy meats.
