I have been looking at all of these rib posts and decided that I would give ribs a whirl.  I had bought some so so St Louis spares on sale at a local grocery store for about $6 per rack.  So they seemed like a perfect candidate for play time.  For this cook I decided that I would coat the ribs overnight in brown sugar ala the Cookshack videos.  I then rubbed the ribs with Butchers honey rub.  I cooked them without foil for the entire cook (approx. 4 hrs at 250 deg).  At that point I painted on on some TPJ apple cherry hab rib candy and here are the results.





It was a nice change of pace to have ribs with a light glaze instead of the bbq sauce.  The rib candy did add a bit of heat but combined with the honey rub and brown sugar made the ribs a little bit too sweet.

those look really good.  I like cooking rib dry sometimes and added a little something, something on the end.  nice cook.   8)

The rib candy is great on Ribs! I like the Mango Habanero.
