Buttermilk and Mayo Chicken
« Reply #-1 on: April 07, 2013, 06:08:33 PM »
Got to 50 degrees today. Time to clean the Mak for chicken.

Soaked one bird in buttermilk overnight and one soaked in a mayo I made the other day. Wanted to compare the results.  Dusted both with garlic salt

The color surprised me. Looks like I cooked it on charcoal. Must be the 400 degree Mak.

These were both really good. Giving the nod to the buttermilk.

Great looking chickens, Pappy. If I didn't know better, I'd think they were cooked over charcoal. Nice job!

Soaked overnight in buttermilk, the lactic acid would have a tenderizing effect on not only the chicken, but the skin as well.  Not a bad idea, Pappy!

Did you cook those skin-side-down?  It does look like it was cooked over charcoal!

Very inspiring! Me thinks I'll have to play around with this idea.
