Okay all you "hot heads".  You have been officially recognized by the Charlotte Observer newspaper.  Interesting article and some good looking recipes.  I will be trying the Korean chicken wings.

I usually have two bottles in the cupboard. I have even cold smoked some. It is even better smoked ;)

That stuff has been around for years! I can remember when we would hit the bar after work for beers and pork rinds w/hot sauce. We must've had 30-40 different hot sauces stored in the back. The most popular was the Sriracha  :-*

Sriracha is good stuff  ;D

Ever so much better than the red, watery, fluffy, artificial, flavorless, vapid, pukey, imitation, gutless, flat, boring, illicit, and worthless stuff made in either Virgina, North Carolina or New York and named after a cat house fop who died with a bullet in his back and an ace up his sleeve.

I'm partial to my habanero sauce but I've always got a bottle of sriracha too. I made some sriracha and ginger wings recently and they were the best I've made so far.

So much so that Subway featured it a few months back on their chicken sandwiches. I had one with a few drops and was loving the burn!
