I was cooking 6 butts for a Memorial to honor a fallen soldier. I did the first 4 butts on Wednesday and was doing the other two on Thursday. So as to not waste any space or smoke I threw a Brisket in the Dragon Lady to go along for the ride.

Somebody fell asleep on the couch and the IT of the flat got up to 192. Which is much higher than my normal 185. Quick 3 hour FTC and onto the cutting board we go.
As I said the IT got away from me so there was no pictures of the flat as the pieces just fell apart after I cut them. Didn't effect the flavor none the kids still hammered their plates and where gone. I did get a picture of the point which turned out perfect. Everything was very moist considering this was a select brisket. Thanks for looking
