I did an
applewood smoked pork butt today that I parceled out to friends and freezer (along with a hefty portion for lunch). Since I was in the mood for a different flavor, I made a quick mojo sauce (olive oil, lime juice, lime zest, cilantro, black pepper, cumin, and a touch of honey) and pan seared the pork in the sauce. Throw in a quick and simple homemade black beans and rice and you've got a quick and filling meal. Plus cerveza ... you can't go wrong with cerveza ...
