Ken, I've had the good fortune of spending significant time in all three states. Areas like Boone, NC are gorgeous and has good pork BBQ but no one wants to deal with snow and you can't find good Mexican food in the Carolinas (they seem to make their salsa with ketchup). Georgia is beautiful and Atlanta is one of the most liveable big cities around but you've got state income tax, kudzu, and no consistent BBQ identity.
But the Hill Country of Texas ... you have beautiful sunsets, temperate weather, a thriving economy, KILLER Mexican food, and some of the finest brisket and sausage under the sun, moon and stars.
I think your decision is made clear.
