I have my godkids here for the evening to give their parents a little date night and they were begging for barbecue.  Since nothing was thawed, I busted into some frozen portions of that pork butt I smoked a while back.

Pretty simple method ... I sliced a good size chunk of pork into long strips, like you'd find in fajitas and then threw that on a cast iron grill pan to give them a little sear and render off some of the intramuscular fat.  I used some Bush's Hot Chili Beans and seasoned them with a little barbecue rub, them mashed them into a paste similar to chunky refried beans.  Add a little seasoned white rice and a flour tortilla pan fried in a little of the rendered pork fat and ... boom goes the dynamite.

A quick drizzle of BBQ sauce, some iced tea all around, and some homemade donuts for dessert and I am now the most popular godparent in the greater Houston area. 

Oh, and please forgive the poor pictures (and the messy plating) but two pre-teen godkids are more concerned with flavor than appearance.   ;)
