Lunch tacos using leftover chili and fresh salsa
« Reply #-1 on: October 27, 2013, 08:53:23 PM »
We made chili last night and had leftovers - today we used that for our version of street tacos.  Nothing unique or unusual, but tasty, savory, and made good use of what little chili we had left.

The players: avocado, tomato, cilantro, onion, and not shown, fresh lime juice and a diced jalapeno went into the salsa.  The cabbage was for the taco

My plate - I was kinda hungry

First leftover chili was smeared onto corn tortillas, then topped with cabbabe, fresh salsa, queso fresco.  After the photo I also added sliced radish, and Tabasco chipotle sauce

No such thing as leftovers.  Just more opportunities to try something else.  Nice move!!

pz, those chili tacos look delicious.Would have never thought to use cabbage instead of lettuce,  but I am going to try that next time. And radishes put them over the top.

Thanks for the kind comments, all!

We decided to do cabbage because it gives the taco a satisfying crunch, in contrast to lettuce which to us taste more like watery leaves - we got the radish idea from the street truck we visited in Prosser, Washington - those were excellent tacos!
