144 degrees in SRG. At 150, will pull from SRG, wrap in foil with 1/4 cup apple juice and then onto charcoal  grill till 192

You had me at brisket.  Don't get hung up on finishing brisket at a specific temp.  When you can probe the thickest part of the flat and the probe goes in like butter, that is when it is done.  That can be a pretty range of temperature (~190-215 internal) depending on the meat, the cooking temp, etc.  Make sure to let it rest until the internal temp has dropped to around 160.

Looks real good. Very sound advice on getting hung up on a temp. It might have been the correct temp on your previous cook but all briskies are not created equal  8)
