MAK 2-3-3 Pulled Pork

We've all done some great pulled pork using our preferred glue, rubs, seasonings, injections, pellet flavors, etc with different pits and methods.  Foil, no foil, fast, low-and-slow ... you name it ... bottom line is it's ALL GOOD!!  Getting too old to do the 20 to 24 hour low-and-slow at 180º-225ºF.  It's me and not my MAK 2 Star General that can't handle the hours anymore.  I value my beauty sleep in my old age  :D  ;)

So I played around with some Butts and developed my 2-3-3 method.  Seasoned the Pork Butt with EVOO and my rub of choice for the day.  Wrapped it in plastic and fridged overnight.  Preheated the MAK to 225ºF with Hickory.
  • (2) - Smoke for 2 hours at 225ºF
  • (3) - Bump the MAK temp to 375ºF until the Pork Butt IT reaches 160ºF.  Remove the Butt and double wrap in heavy duty foil.  Then back in the MAK until the IT reaches 200º-205ºF.  This step normally takes about 3 hours total.
  • (3) - Wrap the foiled Pork Butt in a towel and into the cooler for 3 hours ... FTC

SWMBO likes the results from this method better than the 16-24 hour low-and-slow method.  I normally put the butt on at 9 am and we'll eat around 5 pm with no loss of sleep  :)

Photo1: after overnight in the fridge ... Photo2: after 2 hour smoke ... Photo3: Butt at 160ºF ready to be foiled ... Photo4: double wrapped in Heavy Duty foil till IT reaches 200ºF +

 

After 3 hour FTC you can see that this method does have a nice bark formation.

it looks good.  did you add liquid to it when you foiled it?  the bark looks nice and solid.  I got to cook a butt tomorrow.  mind if I try your method?   8)

Go for it Sparky.  I think you'll like the results.  No, I do not add liquid and after the FTC there's plenty of it there.

Nothing wrong with power cooking butts and briskets. They came out just as good as lo and slo and you are way less tuckered out and can enjoy your supper.

Man, that looks good!!  I don't have a butt in the freezer to cook right now.  I do, however, have multiple vacuum sealed bags of PP that could be ready to eat in short order.  The question "What's for dinner?" has just been solved.
