Sauerkraut and Pork Chops

I’ve never done this before but after seeing several posts with pork and sauerkraut I couldn’t stop my Salivary glands from acting up. So I decided to give it a try.


4 pork chops, 1/2 inch thick and trimmed
Polish Sausage
Onion, sliced and separated into rings
Fresh garlic
3 cups drained sauerkraut
Apple juice
Caraway seed
Salt
Thyme
Black Pepper
Tart apple sliced (I used granny smith)


Brown the meat


Half of everything in the pot


Add meat


Cover with the remainder of stuff and apples. Put on high and hope it’s ready for dinner.
Love to cook and eat

Not bad. Sausage was good, chops were a little too dry for my liking. Overall was good but not great.

Looks good to me Rad!! We like it sour and without the sweet stuff, apples & apple juice, but I have done it that way and not bad but prefer the sour. Like you I always find chops come out a little dry when done in a crockpot. I like to use smoked sausage, brats, any kind of ribs or a mix of these. I have used just a small pork shoulder roast too. Don

It was cooked in a crockpot. What you  see is the crockpot liner, makes clean-up fast and easy.  :D

Polish sausage is my least favorite, too fatty for me, I don't rinse the kraut just pour off the juice then add. Seasoning is salt, pepper, onions, a little garlic. I add a beer and then water if needed. My wife makes the drop noodles but didn't this New Years. The link shows how the noodles look. I had a post showing how she makes them but I couldn't find it. Don
