Bavarian Schweinesteaks mit Sauerkraut und Fingernudeln

or...

Bavarian Style Pork Steaks with Sauerkraut & Rolled Potato Dumplings (or finger noodles).
Thanks Wing commander for the Clarification! You should come give me some lessons in German. ;)

We picked up a small pork butt at the butcher's and had it cut it into steaks. Put them on the MAK with a little Black pepper & Nutmeg.





Switch the MAK setup to the Split grate & Griddle. Put the smoked pork steaks in to braise with some kraut, a little Apple & some caraway seed.


Mix up some potato dumplings (Mashed Potatoes, Flour, Egg, Salt, Pepper & nutmeg), roll them out, then drop into boiling water for 5 - 6 minutes.


Saute some onions in a little olive oil & butter, then add the dumplings. You gotta love that MAK Griddle!


Time to eat! Here are the Potato Finger Dumplings...


And the pork steaks & kraut...

BTW: This is not called "Schweinebraten", but "Schweinesteaks". "Braten" would have been a whole roast. ;)

And the "Fingernoodeln" are here commonly known as "Schupfnudeln"

Try out combining these "Schupfnudeln" and the Sauerkraut (in this case without the apples) with some bacon-onion gravy. Then it's not Bavarian but Swabian style.

Yep, I know the dumplings as both Scupflnoodeln (rolled noodles) and Fingernoodeln (Finger Noodles).

And I figured you were going to catch the "braten" part. ;)  I knew these should probably have been called "Schweinesteaks" and not "Braten," 
I noticed with pork steaks it's not always consistent. Take these same schweinesteaks and cook them over a fire (on a suspended grate) and you now have "Schwenkbraten" (swinging steaks).

BUT my best defense is: it was a whole roast... the wife decided to have it cut into steaks!  ::)  :D


Mmmmm.... Bacon-onion gravy I love it. I just may have to do that with some of the leftover schufplnoodeln this afternoon for lunch!
