My method is to vacuum seal any leftover meat in my FoodSaver.  Most of it I do right away since I know we are not going to eat it all at once, saves most of the juices that way.  When it comes time to reheat it I place the bag in a pot of cold water and bring it to a a boil.  Once it comes to a boil I turn off the heat to stop the boil and remove the bag and open it and serve.

It depends... Ideally, you didn't slice any more than you needed and you are reheating a solid piece.  If so, I like to put it in the oven at 250 covered with foil and bring up to temp.  If sliced, food saver bag in near boiling water.

We like to put the brisket into a Crock Pot add a little apple juice and warm it up on low
