Okonomiyaki, shrimp pancakes and rice

Feb 15 2014

Like most I think, with the cold weather, I have been doing more of the “and more” cooking than BBQ. This dish would be great anytime for a little something different and being on the healthy side.

When I ran across this recipe I just knew I would like it and had to try it. What’s not to like about shrimp, cabbage, and green onions made into a pancake? It’s a Japanese dish, pretty easy to whip up. It was fun to make and I like saying the name Okonomiyaki!

I was not going to post this cook, but the dish ended up pretty and after eating it I thought it was worth passing on.

I made up my pancakes with roughly chopped shrimp, thin sliced cabbage, thin sliced green onions, eggs, flour, soy sauce, and sesame oil. I scaled mine back some since I didn’t want 8 pancakes for the wife and I. I fried them in two batches for 4 pancakes and kept warm in the oven until serving. The sauce was some mayonnaise, soy sauce and Sriracha. I knew the wife would not like the Sriracha so I just added a few drops of hot sauce.

I had a box of Zatarains yellow rice done in my rice cooker. I served two pancakes over the rice for each of us. My wife had the mayo sauce with hers and I had it on one and some Mae Ploy’s sweet chili sauce over the other one. Mae Ploy’s is my go to sauce for a lot of Asian food; it has a sweet chili flavor with a little heat kick to it.

Nicely done!   What a great variety you and your family get to enjoy! :)

I had these years and years ago-- had some Japanese exchange students make them for me and some friends.   Would be a great treat to make them again!

Yummmm!  :)
