I know Tee is trying to cure vegans but a lot of us have vegetarians in the family or friends that are. Our daughter in law is vegetarian but not a strict vegan she eats eggs, meat broths I use, chicken and has ate my meatloaves. Once in a while I like to fix something that is vegetarian for her. Our son had to work tonight so it was a good night to cook for her.

I found this recipe on Food 52 and it was by My Green Diet. This was without a doubt the easiest chili soup I ever threw together. It should have been called canned taco chili since besides the onion and garlic, all comes from a can. You can see all the ingredients except the garnishes in the first photo.

I baked a loaf of my Artisan bread in 5 after lunch to have with the chili. I put this together a little like I would if using meat and the rice was the meat. I sautéed the onions and garlic in olive oil, added the rice and stirred some, added the taco seasoning and stirred. I deglazed the pan with some veggie broth then added the rest and the rest of the ingredients.

I brought to a boil then turned down to a slow boil for a half hour uncovered then a half hour on low with the lid on. I served this with avocado, sliced green onions, sour cream for garnish and some tortilla chips on the side. We all had some bread and butter with it and everyone loved it.

For me it was good enough I really didn’t miss the meat, well a little ground chuck may have been better! So if you need to feed a vegetarian this is as quick and easy as it gets. You could also just throw it all in a Crockpot for a few hours to make easier yet.

After looking at Gene, hikerman’s bread and soup earlier I might have traded him!  ;D

Ingredients, 1/2 cup fresh salsa and 1/2 cup rice in the bowls


Onions and garlic sautéed and rice added


Taco seasoning added

Really like the avocado, sour cream and onion on top. Nice touch!

Even though I am a meaty chili type of guy it looks good Don ;)

Outstanding Don!

It's not uncommon for me to go a couple days where I just don't want any meat.  This dish will be excellent.

Here's a thought: A person could always serve some seasoned ground beef on the side for those who want to add it and keep the dish vegetarian otherwise.

For those that want a "meaty" bite ...try some TVP....Textured Vegetable Protein. It cooks up like ground beef, is made from soy, and accepts seasoning well. As shocking as it may be, I have made meat-free dishes with it that no one could guess that it was not ground beef.

I sure wish I lived next to you just for a taste of the artisan bread you bake.
That looks so crunchy on the outside and soft on the inside.

Don, your veg. taco chili and bread looks great! And if you want to trade your chili and bread for my soup and bread......you're on, I would never turn down a chance to enjoy your fixins buddy!  Don't tell anyone but in my early twenties I was a strict vegetarian for about 8 or 9 years. Then one day my neighbor was grilling steaks on a charcoal grill and it smelled soooo good, that I went into town bought a grill, charcoal and steaks! And i've never looked back, although I have always loved vegetables of all types, and cultures. I truly am an omnivore!

Don, I did a search for sourdough bread cooked in cast iron and this was one of sites. Don't let the site name scare you, this made the best bread I think I've ever made!

Ahron the bread in the bowl of chili was the heel and it is butter on it. I like some bread with my butter! The white on the whole loaf is flour, a little extra helps keep the dough from sticking to the knife when I cut the slits. I brush it off before slicing. Don

Uh....no - tofu does not have the "bite and chew" factor of the TVP. You can make Sloppy Joe's or a meat sauce for spaghetti using TVP, and you will not know the difference from ground beef.
It is granular, like the hale and size of ground beef, and way more firm than any tofu, tempeh or any other type of tofu.
