Juicy tenderloin
« Reply #-1 on: February 26, 2014, 07:24:54 PM »
Cooked my first  tenderloin in TBE today.  Seasoned with Rub Some Butt and cooked for 43 minutes to 170*.  Very good and moist.  My wife saw all the juice and said that it wasn't done.  Had to explain that infrared cooking results in very moist meat.  Didn't take time to make a pretty plate before taking the pic but there were not any peas on it.  I know someone who will be peased :D about that.

Looks good. It's hard to convince some (wives) that it's ok to eat pork that isn't cooked to leather.  :o

This doesn't apply to PAM and Kat so don't slam me  ???

Excellent job on your first tenderloin. My first tenderloin was no where near that good.

Looks good!   Fight the same battle here constantly.   Bride thinks it has to be just short of totally burned to eat pork.   Just have to not let her watch me when checking temp and/or when cutting it to serve.

Looks good

Did ya know:

The U.S. Department of Agriculture's Food Safety and Inspection Service announced that it has lowered its temperature recommendation for cooking pork to 63 C (145 F). That's a change from the agency's longstanding guideline and means pork will be held to the same standard as beef, veal and lamb.
