MAK Roasted Chicken Half

Roasted Chicken served with Roasted Sweet Potatoes and steamed Asparagus ...  8)

Rub under/on skin with Roasted Garlic EVOO, Smokin' Pete's BBQ Seasoning, and McCormick Montreal Chicken Seasoning.  Wrap in plastic and fridge 5 hours.



Preheat MAK 2 Star to 220ºF with Hickory.  Hickory smoke chicken half for 30 minutes.  Bump temperature to 350ºF and pull chicken when IT measured at the thickest part of the breast is >170ºF.  Rest under a foil tent for 15 minutes before serving.

Looks great, but isn't there a rule about having both orange and green food on the same plate?  :P

Nice looking meal. I need to try some sweet potatoes roasted simply like that, instead of mashed into a casserole.

I peeled the sweet potatoes and cut them into manageable size chunks.  Placed them in a Ziploc bag and drizzled some Roasted Garlic EVOO and Fagundes Seasoning (salt/pepper, etc works great too).  Shook the taters until they were lightly coated and placed them in a greased 8x6x14 foil pan.  Covered tightly with foil.  Bake on the pellet grill or oven at 350ºF for 1½ hours.  Worked out great ... the spuds and the chicken both took 1½ hours! 

Following a Paleo lifestyle and Sweet Potatoes are on the acceptable list while regular spuds are not.  Sweet taters are high in fiber, high in antioxidants, have a low glycemic index, and an excellent source of potassium.
