I have never seen one tied up yet, any reason why?
I prefer boneless pork butts which I cut in half (there's only the two of us), trim the fat cap off (IMHO better bark formation), and usually vacuum seal for future use. My local Costco only carries boneless pork butts
I used to buy bone-in pork butts at my local grocer and ask them to cut it in half with their band saw. Then I found pork butts at Costco and Cash & Carry for about the same price as bone-in.
Problem with boneless pork butts when cut in half is there's chunks of loose meat which I like to keep intact. I therefore use 2-inch silicone hot cooking bands rather than butcher twine or toothpicks. Made of 100-percent medical grade silicone, these bands are food safe, freezer safe, deep fry safe and dishwasher safe. Heat resistant up to 600-degrees they can be used in the oven on the griddle, bbq or rotisserie. 2-inch fits up to 20-pound turkey. Colors are ideal for food identification, rare/medium/well, mild/medium/spicy.
You can find these cooking bands on the internet or places like Bed, Bath & Beyond, etc. You can get 20 bands for ~ $6 - $10. I use them for a zillion applications.
