GMG DC ... 1st Pork Butt

Dave and Nepas got me inspired to do a Pork Butt in my GMG Davy Crockett.  After all, man does not live on the road with only Tri-Tips, Chicken, Salmon, Tenderloins, Meatloaf, etc ...  :D  ;)

Rubbed the Pork Butt with Roasted Garlic EVOO and Plowboys BBQ Yardbird Rub.  Wrapped in plastic and fridged overnight ... Says right on the label that Yardbird Rub was "Created for Chicken but made for Pork".  Used it many times on Pork with wonderful results.



Going to smoke at 225ºF for 2 hours -> Bump the temperature to 375ºF until an IT of 160ºF -> Double wrap the Pork Butt in foil and return to GMG until the IT reaches 205ºF.  FTC for 3-4 hours and pull for Supper.  Should take 4½ to 5 hours to reach 205ºF based on previous cooks on my MAK 2 Star and Traeger PTG.



After an hour at 225ºF

Looks like it is going to be tasty! I really like the Yardbird Rub, not only on pork butt, but ribs too!

Took 3 hours to get to 162ºF ( 2 hours @225ºF and 1 hour @375ºF) ... Double wrapped in foil and back into the GMG DC until the IT reaches 205ºF.

Adding Pulled Pork to my GMG DC repertoire while on the road with the RV  :)  Nice to know that I can have Pulled Pork without loosing sleep.  Turned out just as scrumptious as I thought it would ...

@ 8:30 am : Preheat DC to 225º using Hickory
@ 9:00 am : Pork Butt in -> smoke for 2 hours
@ 11:00 am : Bump DC temp to 375ºF -> IT = 110ºF
@12:000 pm : IT = 162ºF ->  Remove and double wrap in foil.  Return to pellet grill till IT = 205ºF
Out @ 1:25 pm : Wrap foil double wrapped Pork Butt with towel and place in cooler
FTC for 4 hours ... Pull  ;D   8)

I prefer boneless pork butts which I cut in half (there's only the two of us), trim the fat cap off (IMHO better bark formation), and usually vacuum seal for future use.  My local Costco only carries boneless pork butts  :)  I used to buy bone-in pork butts at my local grocer and ask them to cut it in half with their band saw.  Then I found pork butts at Costco and Cash & Carry for about the same price as bone-in.

Problem with boneless pork butts when cut in half is there's chunks of loose meat which I like to keep intact.  I therefore use 2-inch silicone hot cooking bands rather than butcher twine or toothpicks.  Made of 100-percent medical grade silicone, these bands are food safe, freezer safe, deep fry safe and dishwasher safe. Heat resistant up to 600-degrees they can be used in the oven on the griddle, bbq or rotisserie. 2-inch fits up to 20-pound turkey. Colors are ideal for food identification, rare/medium/well, mild/medium/spicy.

You can find these cooking bands on the internet or places like Bed, Bath & Beyond, etc.  You can get 20 bands for ~ $6 - $10.  I use them for a zillion applications.
