M3 Rubbed Bison Ribeyes

Put a light coating of EVOO on 2-8oz. bison ribeyes. Then added S&P, a nice dose of M3, and a bit of Way Out West. Into the refrig. for 8 hrs. Got the Grill Grates heated up good and put a potato packet on that contained potatoes, onion, garlic, and a bit of hot pepper oil. After 20 min, threw the bison steaks on with a little handful of hickory pellets. Grilled the steaks to 125F before pulling and resting. Very nice indeed, I love this bison meat!

How did you like the blend of WOW and M-3, Gene?  I have considered a pre-packaged blend of those two.....

I really like the blend Tim. Gives a somewhat fuller flavor than either can give by themselves without crowding the other out. Your blends with low salt allow these two to compliment each other very nicely!

Great looking meal! Can't say I've tried bison steak.
Pappy try it when you get a chance. I believe it's the "healthiest" red meat available and remarkably is very similar to beef in taste. It must be cooked at a bit lower temp. because of the lower fat content, so it does not dry out.

In addition to elk, I love buffalo/bison meat.  Both meats are extremely low in fat and create a problem in cooking, namely overcooking.  Both these meats are best cooked, IMHO, more towards the rare side.

On the other hand ground buffalo makes some fantastic chili.  I won a local chili contest several years ago with my Buffalo Chip Chili.

BTW, your steaks look fantastic.  I may have to play with the M-3 and WOW.  Sounds intriguing.

That looks absolutely delicious Gene! I haven't had bison in years. I have seen it in the stores but
price wise it is more expensive than beef, at least here in Georgia.
