3 slabs of Pork ribs vs 1 Old Smokey

So, Wendy says no big 500 lb smoker for me until we reach Alabama.....so I am "stuck" with the Old Smokey. Of course she brings home 3 big slabs of pork ribs and says cook em all on the Old Smokey.  No problem, We tried out 3 different no salt rubs "as you know, Wendy is a nurse and is on Old Smokes case" from Marshall Creek spices. I used some skewers and rolled up the ribs and we will see what happens later........................

We don't need no stinkin' 500# smoker.....We got Old Smokey. Ribs look great.  ;)

"Rounding" them up, as it were, seems like a novel approach to the problem.  It certainly is a solution!  They look pretty darn good to me.  Maybe you only need a 250 to 300 pound cooker when you reach AL.

Great way to make them fit on the Smokey! I do this at times with my 18.5 WSM..

Those are the biggest "onion rings" I've ever seen. Ingenious use of space on the grill.

We spread out the coals and grilled the ribs. We basted them on every turn with Chris & Pitts 1949 Sauce


Wendy grabbed some Yabba Dabba Doo (Beef) ribs the other day and we did em up the same way as well.....it was a rib fest I tell ya.....................
