Title: Cooking PBC ribs on Saturday

So any suggestions on times and methods for St.Louis spares. I got two full racks.

i've been cooking spares and bb backs on my PBC.  it does not take 4 hours.  mine have coming off between 1 1/2 - 2 1/2 hours.  toothpick ready.  that reminds me.  i have to go to costco.

Not done on the PBC, but you might be able to adapt for it.

Yeah, I found that my stuff cooks quicker than on the videos. But it still comes out super juicy.

Remember cooking times will vary with elevation :) We are at 5,280 ft so it will take longer here. You will have to experiment and get everything dialed in for your location. Happy Pit Barreling!!

I am at 2,400Ft so I think I will check them after 2 hours and then hit them with Texas rib candy for the finish. At least I know how to hook these properly ;)

I am about 40 minutes down the road from Muebe and my cooking times are a little longer than the recommended times...of course where Muebes camps out at  is a higher elevation.....just part of the fun of a new pit...getting it dialed in...........

I was about 4 hours form you folks during this last week - and just could not get over your way...Would have liked to get some pictures of you folks with your equipment.

Question:
If we are finding quicker cook times...If we make the vent opening smaller - will than lower the temp, and slow the cook? I do not want to start a rebellion against your advice. ;D.....Just curious what to expect if someone plays with the vent setting...not that anyone of us would... ;)

Here is the PBC graph of my first cook "Drop Dead Chickens" ;)

The air temp in the cooker was measured in the middle at the sweet spot between the two hanging chickens.

You can see when I first put the chickens in the temp drops and once the chickens start coming up to temp the cooker temp rises to the 300F range. It then maintained around the 307F degree range for the cook so I believe they have got my air adjustment dialed in because that is the temp I like to see for this style cooker IMHO. The ambient temps outside were around 55F and the air was calm.

At around 300F I expect a 2 hour cook time with a 30 minute sauce finish. I am going to start the ribs in a few hours. I also plan on putting the TBE basket in loaded with golden potatoes when cooking the ribs. I will put them in after the first hour because I figure maybe an hour for them to cook ;)

WOW!  Really enjoyed learning the correct ways from the video's.  PBC arrived yesterday.  Sitting next to my Big Green Egg and ready to open the box.  After the video's, anxious to cook the first meal.  Have to go buy some kingsford.  All I have is natural charcoal from the BGE. Now to order some gloves etc.

T- We would have loved to have met you!! Next time :) We've experimented with these a ton and you will find that the top vents (rebar holes) are where most of the air flow comes from. The bottom vent is based mostly on your elevation. If it ain't broke don't fix it :)
