so that means I'm working from home tomorrow.
And that means I'll be trying my first brisket flat on the PBC! 

I think Dee is going to stop by and take some photos for me. ;-)

During the cook.

Its now wrapped in foil resting comfortably. Coals are still looking good, so I'm throwing on some garlic bread.

First of all, I've got to say a 3.5 hour brisket is most impressive. Smoke ring and all. Moisture was pretty good, but I need to work on the flavor profile a bit. Tasted a bit like roast beef in places.

Sampled the brisket and compelled to report it was mighty good. Not too much smoke penetration, tender with good flavor.  Nice work Grossie

3.5 hours is awesome. So much for setting the alarm clock and freezing your arse off at night. That is a good looking brisket  :)

Upon further review, the flavor needs a little work, but it was better than I originally thought. I brought a little bit into work and it seemed to go over well.
