Title: 1st cook on new PBC

It finally arrived this weekend, and of course its 14 degrees, windy, and sleeting.  So naturally I cooked some ribs.  Things went well, it took about and hour for the PBC to get up to temp.  Once there it sat at 275 the entire time.  I did 3 hours with some hickory smoke, and lots of naturally created smoke.  From the grease drippings, just wow on how that works.  Then I wrapped in foil with some butter and hung back up for an hour.  I had one rack fall as I was pulling it off to sauce.  I quickly rescued it, and they did not get put back on to caramelize the sauce.  It came out good, the ends of the rack were toasted.  So I am going to start cutting the racks in half.  I also keep a cooking log, for time reference.  Just have a small learning curve.

Man you are doing great to cook in that weather and it looks great!!! Nice cook!!! I probably would too if I got a new smoker! One word of caution though it looks like you cooked on a wood deck. Get something fireproof under that smoker. One member showed where he used his PBC on a wood deck and showed pics of a badly charred deck under the smoker that almost caused a fire. The cold probably saved you. Don

Great first cook! Those ribs look outstanding!

As Don stated make sure to use the stand when using the PBC on combustible material. Hard to tell in the pic if you are from the angle.

Looks outstanding!
My last batch of ribs ended up being so long that they stretched all the way to the coals, so I may do the half rack thing myself.

I'm wondering how the butter/margarine worked out for you? I was concerned it would all run off, so I wrapped mine and put them on the rack.

It did run down, but I didnt put anything else in the foil.  Just some butter to steam in there. I cant use my rack currently, that will be fixed by the weekend though.

Looks great! I usually cut mine in half, too.  I never wrap them in the PBC, though, because the PBC really shines with ribs.
