Didn't really trim these at all, I was happy with them out of the package. Went with Squirt's idea of the red mustard. And some FS&B.
Enjoy the pics, we enjoyed the eats. :)

Looks great Sam. This will be the dumbest question yet, but can you hang the ribs horizontal instead of vertical? Would this cook more even? Would they fall off?

They might. I imagine if they are really long racks you could halve them so they don't hang so close to the coal bed. My rib cook both racks were very evenly cooked with the racks left intact.

I wouldn't recommend cooking them horizontally, like Muebe said they cook evenly when hung vertically and you can cook up to 8 racks!!
