Title: Full Barrel
Post by: tekn50 on May 02, 2015, 09:24:53 PM
Had a full barrel today, my sister and her kids were coming over.  I love cooking for a crowd, especially family.  So I did up, 3 racks of spare ribs, 6 ears of corn, and 12 potatoes.  I rubbed and rested the ribs for 48hrs in the fridge.  I did that, because I had time and new I would be busy the next night.  The corn just got hooked and hung, I did not have time to do my normal brown sugar seasoning thing to them.  The potatoes went for a swim with some olive oil.  Then got a light coating of Mrs Dash Herb and Garlic, and some sea salt.  I was out of hooks by this time.  So I hung the skewers upside down.  You have to put close to a 180 bend in them to keep the taters from falling off anyway.  It work out great.  Everything came out good, the ribs were a little on the drier side.  Not to the point were anyone noticed other than me.  I am my worst critic, I always find flaws with my cooking.  The potatoes are all ways a hit, if you have not done them yet.  You need to, I use the little red ones.  Happy Cooking to all.

What a great cook! Everything looks perfect. I haven't tried hooking corn or taters - approximately how long did they take?

You can wrap and hang ribs on the PBC if you're into that.

The corn takes about 45 min to an hour.  And the potatoes about an hour and a half.

This was a cool cook.  How did the corn come out?

It comes out great.  You open the husk a bit to let in some smoke.  I just hook it threw the stalk stub.

Right on.  I just bought a pbc for my wife.  She loves the chicken off of it.
