Title: Pork Chubs

Picked up some pork sirloin tip roasts at Costco (we call them chubs) they are about the size of a small cantaloupe. Rubbed them with a garlic peppercorn rub. I usually run them at 165 for about 45 minutes but I got home late from work so I put them on at 325 degrees for about 40 mins then cranked it up to 375. I pulled them off at 153 degrees and rested under foil tent for 20 mins.  I was amazed how juicy and tender they were considering the fast cook - just under 2 hrs. The Mrs made home made apple sauce and some mashed potatoes.

Great cook.  You can clearly see how moist that pork still is ! ! !

I haven't seen that cut, but will look out for it from now on.

We find them in the pork section with the other cryo-vac stuff.  I think they are "Swift Premium" but not positive. There are four of them cryo-vac'd and taped together.  The package is clear with a black and red label.  The nice part is that you can cut the cryo apart and only make one at a time without opening the others.  Good Luck - would love to see some different ideas on how to cook them too.

Great idea Don - next time I will save one and run it through the meat slicer and make some thin slices for sandwiches.  :P

Over the years I've smoked/cooked a bunch of those babies. The price is always reasonable and the results are fantastic ...
