Got the bird in the PBC just after 11 AM. Want it done early and in the warming tray so I can get some other things done around here.

Barrel temp is pretty high at the start, should settle back down soon.

Not sure what country your from but here in Canada we have thanks giving on the second Monday of Oct.
Columbus Day, which falls the second Monday of every October in the United States, is America's most awkward holiday. It's the day they celebrate America's discovery by Christopher Columbus in 1492. But, as many Americans can tell you, Columbus never actually reached North America and America had been discovered thousands of years earlier by humans who migrated from northeast Asia (and around 1000 A.D. by Leif Erikson). More to the point, Columbus is increasingly known less as an explorer than as a genocidal maniac who began the centuries-long destruction of the Americas' native populations.
Celebrating genocidal maniacs is never fun, and even less so when it's on the false pretenses of a discovery that they didn't quite make. So here's a better idea: on the second Monday, celebrate Canadian Thanksgiving instead!
Instead of Columbus Day, Americas northern neighbors spend the second Monday of every October celebrating Canadian Thanksgiving or, as they call it, Thanksgiving. :P

Almost done, just going to crisp up the skin @ 350°F for 5 minutes. Now to get peeling some potatoes for mashed potatoes.

Looking good Devo BUT where's the dressing :( don't do no Turkey without dressing and were not talking stove top. :)

Just trying to make a good Thanksgiving meal for my son and teach him so he knows just how lucky we are to live in a great country like Canada.
Got the turkey warming in the turkey roaster till all the other fixings are done and dinner is served. The hardest part is done and thats what I wanted to accomplish. 4 hours from start to finish on a 12 lbs. turkey. Had to adjust the bottom damper a few times but all is good.

Just enough food for my son and myself with left overs for a couple of days. There was stuffing but it was still in the kitchen.

Yup it was a very moist turkey, one of the best that I have done in the PBC to date. The skin was just perfect to. Back to sleep now ;)

It's always the second Monday in October, next year it will fall on the 12th. Canadian Thanksgiving occurs on the same day as Columbus Day here in the US.
