The problem I had was with my dough. It had risen quite a bit and it would not slide off the peel... I think if I can get the proper dough down and figure out how to get the dough to slide off the peel with ease I will be in business
The dough was also over 48 hours old so maybe that made it rise so much... I did like the flavor of the dough however. There was a slight sweetness from the honey.

Very nice review Mike. Excellent results.
I use the metal peel. What I do is a light coat of flour just to turn the peel white and then I sprinkle corn meal on the peel. After I enlarge the dough to the size that I want, I move the dough to the pizza peel. Then I build the pizza on the peel. Once completed, I slide the pizza on to the stone in the Kettlepizza oven and let it sit until the bottom crust firms up enough to rotate. You'll get use to this.
In so far as assembly goes, very nice job. I personally, do not have the patience for this anymore. Perhaps to old and decrepid. I guess, if I can't just pick it up and put a magazine in it, toss the back the slide, it is too complicated for me anymore.

Pam it is 4 inches tall in the center.
Pam the most recent pizza I made was well under 3 minutes. I did load a lot more pellets the second time I used the oven. I can say it was well over 900F the second time ???
So next time I will start with just a handful of pellets instead of two 8)
I did only spin that pizza once after 1 minute and it was perfectly done. It had a great wood fired flavor to it.
I halved my yeast and the dough came out great. I think I have a good recipe down and I am going to stick to it.

Nothing like the fun of doing pizza, especially when entertaining because it is so fast. You can invite your friends to build their own pizzas with the ingredients you provide, or those that they wish to bring. It's fun in the same way that the ice cream joints are (the ones that allow you to build your own creations). Pizzas finished in under 3 minutes means that everyone can sample lots of different pizzas - your place will be the hit of the party circuit.Everyone invited..we do that at the camp ground..usuall make 15 pizzas..at least I make 15 lb pizza dough. Everyone bring their own toppings and then it starts..on the beach it's easier with a 22" Weber, make your own. I spent one year making them for them..never again. Your pizza..you make it..its more fun that way. and everyone gets involved.
By the way, when are we invited? :P

Get a kitchen towel and try that for a while..no mess and you will get the hang of it..promise. You will see it happen. Keep knuckle in and stretch that way too. Tossing makes it more uniform. I will also get the dough ready outside. This way all of the flower is outside when I spin the pie and then all I have to do is hose down the outside table.

Just made some more dough last night in the bread maker.My bread machine takes 20 minutes to make dough. I let it rise in a dedicated rising bucket, it's better overnight or a couple of days later, but frozen is still very good. One of the few things that freeze well. I always add granulated gahhlick to my dough to. They were eating it plain at the campground, till I clamped down on them..geeez. Ya never know when your gonna need some. Enjoy. Pam .☆´¯`•.¸¸. ི♥ྀ

Packed it up in Saran Wrap and a freezer bag then into the chest freezer.
I am going to make some more tonight until I have a nice little stash going ;)
Pam I am still going to leave the spinning to you guys.
Mine takes 1 1/2 hours to make dough. 20 minutes mixing and the rest proofing. It warms up the dough with the heating element. Then I just pull it out and bag it.After it's mixing..I take it out and make more. Put it in a proofing bucket and it will rise all by itself. I keep punching it down, but when it hits the frig and cools..it quits rising so fast. You can make lots that way. I make 15 lbs in a lil over 2 hours at the lake. 1.5 lb at a time. You should smell and taste the difference in the dough. The house will smell like a pizzeria, promise.

muebe ... what if you swapped out the 12VDC computer fan with a 120VAC 4" fan instead of using a 120VAC to a 12VDC converter? Granted, you would lose the portability of a 12VDC fan but at home and most RV/Campsites you have 120VAC available. If you're boondocking you most likely will have a generator for AC power ... just a thought 8)

have you tired doing any bread? Follow the crispy bread recipe but just make a smaller loaf? I know you can do bread in the bigger wood fire ovens.

What kind of pellets are you using and do they impart the favor of the wood into the pizza? Also have you tried pizza pans for your pizza instead of going direct to the oven surface?
So I did my first modification to the Uuni pizza oven. Oh you guys knew this was coming ;)
I got a AC to DC wall plug transformer that is rated at 12VDC and 100ma. The 12VDC computer fan that comes with the oven is rated at 130ma so this is just under it's rating.
The air flow and fan speed is almost identical to when hooked up to the battery pack. The battery pack uses 8 AA batteries at 1.5volts each totaling 12VDC.
Going to try and do a test run tonight. If everything is good then some 9volt connectors will be picked up at Radio Shack and hard wired in so that I can switch from the transformer to the battery pack when needed.
Why should I waste batteries when I have a power plug out back?
Might be a good idea for an accessory that they should carry.
I know the batteries last for 8 hours but they will slow down the fan as the batteries lose voltage and batteries are not cheap anymore. So with the transformer I will get consistent and indefinite fan speed & run time.
Pam if it works fine I can rig one up for you and send it your way if your interested. I will only charge you parts and shipping.
what about using a 12 volt gell cell battery like they use on the spinner on deer feeders
and you use the small 12 volt chargers to re-charge the gell cell
I use 6 volt gell cells to run my strobe on my wedding camera

Well Mike it was my own dumb butt fault. Should have thought about that happening. I could have had it delivered to a border store just 40 minutes from me and that fee would have been taken care of. OH well I am just going to have to stand on the corner and sell lots of pizza. ::)

Should I plan on a wooden board to put under it or some other type insulator?
If I set it on an outside countertop (Laminate) would it get hot enough to delaminate the top?
