I cooked some simple, yet delicious chicken thighs and bone in country style spareribs today. Everything came out moist and very tasty. A quick cook, 1 1/2 to 2 hours. I used a different lighting technique this time and did not run into the doubled cooking times I experienced last time. 20 minutes in the chimney starter, coals in the center of the basket (idea I saw on YouTube) and I let them burn for 20 minutes before I put the food on. Didn't think I'd fit all my food on the grate, hahaha! A very good looking cook!
That's not a typical cut I've seen around here. It looks like they're essentially chops cut from the front end of the back rib/loin section extending into the shoulder. A lot of nice meat on them! :thumbup:

Yep pretty much what they were, thick cut pork chops very reasonably priced with a nice little layer of fat on them for flavor.

It's a you tube channel called "Cooking with Ry" I've found it pretty useful for my needs. Yeah, I definitely like the charcoal gadget, it centers the initial chimney of coals right in the center of the basket. Which, in my experience provides a more even and complete burn. Hope this helps!
