Just remember the Chili Heads Emergency First Aid Kit:
1. Lots of popsicles ( best used 2 at a time, one in each hand....you get the picture... :o )
2. Tucks......work best if duct taped in place along with an ice cube...
3. Immodium....for too much time on the "commodium"......

Love the heat....hate the (heart)burn.................. :-\ All of a sudden it seems I am not able to eat the hot stuff like I used to. Really ticked off about it too......

I am kinda favorable to the chipotle/ancho ..just enough heat but not overpowering.

Then into the Bradley for some smoke & dehydrating. Two hours of Hickory with the cabinet temp of 165F and convection fan on...

They are very mild to my surprise :-\

Those are some fine looking peppers. You can kick anything up a notch with those.
Reds are what they make Tabasco out of......they can get hot in a sandy soil rich in nitrogen. In the old days if you ever went to New Iberia LA you could tell who worked at the Tabasco plant as their finger tips were always red.

Ron Tabasco is made with Tabasco peppers and they are indeed red. These are Red Jalapenos though. They are very mild. Tabasco peppers look more like Serrano peppers but are smaller and hotter than jalapenos.

Muebe..looking real good..I dry the jalapenos and grind them up in spice grinder also..I use them in fried corn..most excellent..never dried the habaneros or serranos..might have to do that too. I made Tommy's habaneros sauce and no one can touch it so not even gonna try that. Pam .☆´¯`•.¸¸. ི♥ྀ.

A friend from another cooking forum mailed me some native Texas chili tepin seeds a year or so ago. I planted some and had two plants growing on my deck in 5 gallon buckets. When they first put on peppers and were green, I tried one and they were pretty hot but not too bad. By the time they turned red they were HOT. I didn't get a huge yield but did make some good pepper sauce out of them. I may grow some this year to dry and make some chili powder out of.

I think there is a new law here Ahron - that requires us to attach a seat belt to the bolts that hold the toilet to the floor...... ;D

I never heard of tepin chilis..will look for them, I like the sounds of that. Might even process some green ones then wait and process the red ones too, in defferent batches...thanks 2P. Pam .☆´¯`•.¸¸. ི♥ྀ.
