fajitas- what to do with leftover tenderloin

Well, I had some left over tenderloin and decided instead of simply reheating that I'd make fajitas. I made some on Thursday and had a little meat left I figured why not again, but to get pictures this time. They were pretty tasty so I figured I'd post them up.

1 large green bell pepper, 1 large red bell pepper and 7 jalapenos sliced

pre sliced baby bellas

red and vidalia onion slices

some 'mexican' infused oil from the local tailgate market
and I added a diced garlic clove, a mix of cumin, habanero powder, chili powder, and a half lime worth of juice

put all the ingredients into the 10" skillet, and sautéed them

then I cut up the tenderloin to be used

added the tenderloin, another half lime worth of juice and cooked another couple minutes

and heated the tortillas and added four cheese mexican blend

the sauteed veggies and tenderloin in the cheesy tortillas

the finished fajitas with a splash horseradish sourcream, regular sourcream, hot salsa and gaucamole

Yes, these were in cast iron, just got myself some new cast iron supplies from the lodge store a couple weeks ago; and it is one of the few skillets I have with high enough sidewalks to fit everything

As to how spicy they were, actually not that hot, only about a half teaspoon habenero powder, 3/4 teaspoon of chili powder and about 1 teaspoon cumin. though I must admit that I really like hot foods so results may vary depending on heat tolerance

And keeping the tortillas soft, well I just barely warm on 1 side, flip, add cheese and let sit for about 1.5 min in pan to just barely heat cheese and then add hot ingredients to finish the melting process
