Title: Found in Freezer

Found this in the freezer, Decided I better do something with it. Its thawing in a brine now (about 12 hours so far) and will go on tomorrow morning. The brine is a bit different this time.... The only soda I had was some someone left in my fridge. Orange... I mixed it with Boston Bay, Onion powder,salt apple cider vinegar, and a touch of soy sauce.  I taste tested and was surprised, not bad at all. I was afraid of the orange but I think its going to be fine.
 Will probably do a Fine Swine n Bovine dry on it,   but thats to be decided yet.

This will be interesting.  I happen to have a wild boar ham in my freezer.  I'll be watching this one closely.

 Actually,  had I paid more attention and not over cooked it  ???, it would have been better.  2nd, I would not use the vinegar again. I would have expected it to loose its sharpness but it didn't. I have used it on ribs many times with good results. I may have left it in the brine too long.    I think it and the orange soda together was the main problem. A little too sweet and Bright if that makes sense. 
 I have used the Boston Bay on lots of things with good results.
It will be sandwich meat or maybe I can add some BBQ sauce and clean it up a little.

Ok, One last thing....

 I went home and tasted the ham again. It had improved some... Not such a sharp tatse. I chopped it up and put it in a pot, simmered it a little while in just a little water. Added BBQ suace and simmered a little longer.  Made sandwiches for dinner and Kerry commented ... "That is a lot better than the one you made yesterday"...  ::)
