Title: Fruit Cobber

Right now we are getting a lot of fresh peaches, blueberries and some other fruit such as strawberries.  I'm making some cobblers using the recipe below.  I can't remember where I got it but it works really good.  I sometimes mix different berries and fruit.  For example, I may put peaches and blue berries together or even throw strawberries in with them.  I have done no fruits other than these three.  I also have done all three separately,

 As personal preference I double the amount of ingredients for the crust. Here goes.

Fruit Cobbler

3-3 1/2 cups of fruit
3/4 sticks of butter
1 1/2 cups sugar ( I use a sweetner instead of sugar)
1 cup milk
1 cup Self-Rising flour. ( If you use All Purpose flour you've got to put in some salt and other stuff with it. I like SR flour)

Mix fruit with some sugar sugar.  Set aside.
Melt butter in cassarole dish at 350*
Mix sugar,milk, and flour
Pour batter on butter then pour in the fruit.
Bake one hour.

Now if you double the crust you want to double everything but the fruit and the baking time will increase 15 minutes or so. Just watch it.  I'd rather have overcooked than under cooked topping.  You can also sprinkle some cinnamon or a sugar/cinnamon mixture on top after you pull it out of the oven.

Y'all try it. I think you'll like it.  It's so simple I can do it.

Just happen to have some Peaches that are getting a little too ripe. will try this tomorrow.
By the way it's, 1/4 teaspoon salt and 1+1/4 teaspoons baking powder to a cup of all purpose to make it self rising.

Dee, a great looking treat and I'll bet it can be done as well in a Dutch Oven.

This would be a good dessert to have at the Gathering.  We'll probably need some vanilla ice cream to go with it, however.

I bet it could be done in the SRG.  Particularly if you use glass.  Dee
