Title: Smoked Fresh Tuna on the GMG DC

Got some fresh Tuna filets from Kat on Monday and after tasting her smoked Tuna sample I decided to smoke one of the filets and freeze the other.  The filet was really thick so I sliced it and cut it into manageable pieces.

Marinaded the Tuna for 4 hours using Mr. Yoshida's Sweet Teriyaki Original Gourmet Sauce

Patted the Tuna dry and allowed it to dry a little for an hour

Preheated the GMG Davy Crockett to 180ºF with Hickory.  Smoked at 180º for an hour and then increased the pit temperature to 250ºF until the internal temperature reached 145ºF.

The Tuna is naturally not as oily as Salmon so no "buggers" developed  :D  but boy did it ever taste fantastic!

Until yesterday I had never had smoked tuna either!  But I still have another Tuna filet   :D  :D

Wow! Pete that looks great!

I will bet that the smoke flavor goes very well withe the teriyaki flavor.

How was the texture?

The texture was very similar to the salmon that I have smoked on the DC using this technique pz.  I would say that the salmon turns out a bit more moist but that's probably cause it has more natural oil.

Nailed it! I  will definitely try the teriyaki!   We just did a real simple brown sugar and salt brine on the ones I gave you-- sorry I didn't have the time to chat more on Monday, was trying not to be late for my lunch date!  :) 

The stuff I did turned out a little dry, so we ended up turning it into a nice cream cheese smoked fish dip, which was killer.   I skipped the drying phase to let the pellicle form, so that might have contributed to it being a bit drier than it should have been. 

Glad you liked it-- let us know what you do with the other fillet!

I was wondering because tuna is typically so lean and relatively easily dries.  However, it does look like your marinade minimized the moisture loss because it is not too different from salmon!

Definitely something I would like to try because tuna steaks are one of my favorites - usually so smooth they melt in your mouth
