Almost 3 hours into it and the first thing I have noticed is since pike are not a oily fish I am glad I used my frog mats. Going to have to be careful removing them from there even still. Going to use a spatula I think.
So these sat over night in Soy Vay Veri Veri Teriyaki Sauce. I had a walleye smoke recipe that said the fish should be close to done after 3 1/2 to 4 hours. Since pikes texture is very similar to walleye I will be checking on it around then.

Gave them a brushing of maple syrup

Back in the smoker till I get the texture I am looking for.
So after another 3 hours plus I took them out. They seemed to be drying out to much around the edge so I pulled them. My test piece tasted very fishy. The edge was like Indian Candy Salmon. The centre was nice and flaky. Nothing like smoked salmon but still very nice to chew on ;)

Looks like if you let them go you would have made some pike jerky. would you do it again?

Nice experiment SD. I have not had pike since I was about 13 but had them from the North Channel and remember they were great pan fried. Don

Good input on smoking a non-oily fish. I do love pan fried fish!

I agree; they do look good.
Don, do you think it'd have worked better smoked without the Teriyaki marinade?

It might have, I have had white fish smoked without anything added and they are wonderful. White fish are pretty close in texture.
Being Canadian, most of us fishing people don't care for pike on the best of days. Yes when cooked right they are a close second to Walleye but unlike my American neighbors we do not go looking for them. So that being said it all could be in my brain that they did not turn out just right. I think its great you guys come up here and fish for them. I always enjoy letting a 20 pound pike go when I am fishing beside my American friends. The look on their faces is priceless. ;D
