This will be a two part cooker but it will finish in the dehydrator so I will put this here.
Pull a eye of round out of the freezer two days ago. This morning it was thawed enough to work with. I used to use my big Hobart slicer for the job but I'm getting pretty good at slicing with my filet knife so that's what I used. Besides you need to trim the fat off anyways so you might as well keep going and slice. ;)
Out of a 5 lbs. roast I got just over 4 lbs. trimmed whole jerky meat.
This will be a mesquite & hot pepperoni mix I have been using up. Kind of 2/3 mesquite and 1/3 hot pepperoni.

If the weather permits this will be going into the smoker for at least 3 hours of smoke @ 120°F. After that they will go into the dehydrator.
I'm not a big fan of liquid smoke......just seems wrong :P
So this bag is in the fridge over night. You can see the red pepper flakes in the picture. Even at 1/3 the mixture these come out with some fine heat. :)

Off to a late start this morning. Six racks ready to around 9 AM.

Got the tube going for some smoke in my cold smoke adapter for my bradley.

Finally in the smoker @ 120°F for a few hours.

After 3 hours going to the dehydrator.

Going into the Sedona Digitally Controlled Food Dehydrator. The bradley racks are just a tad small fitting the Sedona. Just transfer the frog mats over to the Sedona racks.

Another 6 hours in the dehydrator @ 150°F should do it.

Works as advertised Rick. Never had one before so to me its wonderful. I like the two fan option and being able to use just half of it with the divider.

Mesquite & Hot Pepperoni. Man, that sounds like a good smoky-spicy combo. I bet it's good.
