Title: Pepperoni snack sticks

I got my LEM 10 tray a few weeks ago but have only had time to run one batch of jerky. Today I stuffed 10# of pepperoni snack sticks  and put into the dehydrator. It only took 5 of the trays. More pics to come.

Watching this one as well. 

The LEM is a pretty decent unit, especially for the sale price.  Mine ran pretty even temp wise on the last set of sticks I did (I just screwed the measurements up and ended up with Mace sticks instead of snack sticks - all I can taste is the mace).  But the LEM worked flawlessly.

They are done, took 7 hours. I thought I had the temp set @ 155f but was 145f for the first 4 hours. I put them in the fridge for an over night chill wrapped in newspaper because I don't have a big paper bag. They taste awesome. I will do this one again. Next I would like to try some fruit leather or "fruit roll ups". If anyone has tried these please make a post. Thanks.

Nice job. Did you use a commercial mix or is this your own recipe?

It was the recipe I used for my dry cure pepperoni.  It is the homemade traditional pepperoni recipe off the UMAI site but I used anise seed instead. Also I used cure #1 for this recipe.
