I had to write this in response to our friend Hub’s post on Super stuffing mix. I think it’s true that most Yankees do not care for cornbread stuffing. I love cornbread so you would think I would like it; but I never cared for any I tasted. I think most of them were over seasoned with sage. I copied Hub’s recipe and will have to try it since it sounds good.
I can’t remember my Mom fixing dressing that much when I was growing up. We did have a lot of cornbread though. Most Thanksgivings and Christmases we had a good old fashioned baked bone in ham. Then there was ham and beans with some leftover ham with cornbread.
I note that a lot of you southern members like your dressing and have it a lot as a side dish. I never grew up having it except at holidays so don’t have it much now. I think we all tend to eat pretty much the foods we grew up with and even learn to like some we hated while young. I never cared for beans that much but now I could eat them at least once a week. So there is hope for some of you pea haters!
After I got married my Mother-in-law always had stuffed turkey and oyster dressing for Thanksgiving. I think she made enough to stuff the turkey and then added oysters to the rest and baked for the side. It was delicious and wished I had gotten her recipe.
When our kids were growing up we always had holidays with the wife’s family and since there were just 3 of the cousins we all took turns having the dinners. My wife’s cousin Susie always had a great meal and fixed one of my favorite dressings. She got the recipe from a friend. Whenever I do fix dressing it is this recipe I go to. Pretty plain and simple but good; give it a try.
Barb Coles dressing mix
1 ½ loaves bakery French bread, torn or cut up
3 eggs slightly beaten
1 ½ cups celery diced
¾ cup chopped onion
Salt and pepper to taste
3 15 oz. cans good chicken broth
3 Tbs. butter
Mix the first five ingredients together in a large bowl. Heat the chicken broth and butter; pour over the bread mixture. Place in a well-greased casserole dish with a lid. Bake at 350 deg. for one hour covered. Remove the cover and bake another half hour or until brown.

Don, I love stuffing and that's definitely a simple, easy to make stuffing recipe.
I think it’s true that most Yankees do not care for cornbread stuffing.
I'm not sure how accurate that is, because I love cornbread and cornbread stuffing, my (extended) family loves it, I have lots of friends who love it. Funny enough a good friend and I were just talking, at the football game Friday night, about Thanksgiving coming up. Ironically the topic turned specifically to cornbread stuffing and how it's his favorite part of the meal (mine too).
Don't get me wrong, I love regular stuffing too. In fact, I think it's fair to say I just love stuffing... PERIOD!!! :D
